If you’re growing hard neck garlic like the terrific local garlic Dig This sells every fall, you’ve probably noticed the “curlicue” tops or “scapes” that are forming at the top of the plants. Cut them off and use them in stir fries, or make this yummy garlic pesto to use on pasta, grilled chicken, homemade pizza, or mixed with new potatoes and Parmesan cheese. Here’s our recipe for Garlic Pesto:
1 cup grated Parmesan cheese
3 Tbsp. fresh lime or lemon juice
1/2 cup ground or slivered almonds
1/4 lb. garlic scapes
1/2 cup olive oil
Salt to taste
Puree scapes, almonds and olive oil in a food processor until smooth. Stir in Parmesan and lime or lemon juice and season to taste.
