Make Pesto!

basil2This long hot summer is perfect for growing basil. Here’s my favourite pesto recipe. Make lots if you can and freeze some for use in the winter.

¼ cup almonds

3 cloves garlic

1 ½ cups fresh basil leaves

½ cup olive oil

1 pinch ground nutmeg

Salt & pepper to taste

¼ cup grated Parmesan cheese

1. Preheat oven to 450 degrees F. Place almonds on a cookie sheet, and bake for 4 minutes, or until lightly toasted. Watch them carefully – don’t let them get too brown.

2. In a food processor, combine toasted almonds, garlic, basil, olive oil, nutmeg, salt and pepper. Process until a coarse paste is formed.

3. Stir in the Parmesan cheese and serve over warm pasta noodles. Or spread some on a toasted bagel and top with tomato slices. Yum.
