Mo’s Famous Ginger Shortbread

shortbreadIf you’ve been to the Christmas Open House at Dig This Broadmead you probably sampled some of Maureen’s wonderful ginger shortbread.

Here’s the recipe below. But we warn you: these cookies are positively addictive.

 

 

  • 3 cups all purpose flour
  • ½ cup rice flour
  • ½ teaspoon salt
  • 2 cups softened butter
  • ¾ cup berry sugar
  • 1 cup finely chopped organic ginger

Pre-heat the oven to 300o F. Cream butter and sugar together. Mix in sifted flours and other ingredients with spoon. The dough should be pliable and firm, not crumbly.

Roll into a ½ inch sausage shape and cut ½ inch thick slices. Place on a non-greased cookie sheet. Prick cookies with fork.

Bake 25 minutes; cool 2 minutes then transfer to cooling wire rack.
